Bravo Coco Beach Ltd is seeking a skilled and experienced Bar Manager to lead all bar operations at Bravo Coco Beach in Dar es Salaam. The role focuses on delivering an exceptional guest experience, maintaining premium beverage standards, ensuring cost control and compliance, and driving revenue growth in a high-volume beach and resort environment.

Job Purpose

The Bar Manager will oversee end-to-end bar operations, ensuring high-quality beverages, excellent service standards, strong team performance, and profitability. The position requires a hands-on leader with strong cocktail expertise and experience in premium hospitality environments.

Key Responsibilities

Bar Operations and Service Excellence

  • Oversee daily operations of all bar outlets at Bravo Coco Beach
  • Ensure consistent delivery of international-standard cocktails and beverages
  • Maintain high standards of cleanliness, hygiene, and bar presentation
  • Coordinate effectively with floor service, kitchen, and events teams
  • Handle guest feedback and resolve service issues promptly and professionally

Beverage Menu and Innovation

  • Develop, update, and manage seasonal and signature cocktail menus
  • Introduce new beverage concepts, premium spirits, mocktails, and beach-inspired cocktails
  • Ensure correct recipes, portion control, and standard measurements
  • Conduct regular tasting sessions and quality checks

Inventory, Cost Control, and Procurement

  • Manage bar inventory, stock levels, and storage
  • Minimize wastage, breakages, and pilferage
  • Conduct monthly stock counts and reconciliations
  • Work with procurement and finance teams to ensure timely ordering and cost efficiency
  • Monitor beverage cost percentages and profit margins

Team Leadership and Training

  • Recruit, train, schedule, and supervise bartenders and bar support staff
  • Train staff on cocktail standards, responsible alcohol service, and customer service
  • Conduct performance reviews and provide coaching
  • Build a positive, professional, and high-energy team culture

Compliance, Health, and Safety

  • Ensure compliance with alcohol licensing laws and health and safety regulations
  • Enforce responsible alcohol service standards
  • Ensure bar equipment is well maintained and safely operated
  • Adhere to internal SOPs and company policies

Events, Promotions, and Revenue Growth

  • Support bar operations during events, parties, and special promotions
  • Collaborate with marketing and events teams to increase sales and brand visibility
  • Analyze sales data and recommend promotions to boost revenue
  • Manage bar setup and staffing for high-volume beach events

Key Skills and Competencies

  • Strong knowledge of international cocktails, spirits, wines, and beverages
  • Excellent cost control and inventory management skills
  • Customer-focused with strong attention to detail
  • Ability to work under pressure in a fast-paced beach environment

Qualifications and Experience

  • Diploma or certification in Hospitality Management, Food and Beverage, or Mixology
  • Minimum of seven years’ experience in international-standard beach restaurants, resorts, or lifestyle hospitality venues
  • Proven experience managing bar teams and high-volume service
  • Experience in beach clubs or destination restaurants is highly preferred
